This vegetable is named for the spaghetti-like strands that the flesh forms inside the rind. These vegetables have a lot of beta carotene in them which our bodies turn into vitamin A. This kind of squash is also fairly low in calories and high in fiber.

Of course, if there are any food allergies you will need to take that into account when picking which recipe to make.
