Entirely Different Mexican Black Bean Salad Recipe

Everybody enjoys good food. Some recipes are so easy to prepare that anyone can do it in just a few minutes, while others may be complicated, but the result is worth the effort. If you got tired of always the same recipes, try making one entirely different Mexican black bean salad recipe that might surprise you with aromas and flavors. Here are a few simple and easy to make recipes you will just love.

You will need a larger can of black beans, one green onion, sliced, a little bit of white vinegar, one lime, two potatoes cooked in skin, sliced, one avocado, sliced, two cloves garlic, minced, one can sweet corn, two cooked eggs, sliced, one red sweet pepper, sliced, salt, pepper, chili powder. And, of course, you also need some good quality olive oil.

Slice the onion and mix these slices with one teaspoon of white vinegar, salt and little bit of a lime juice. Set it aside or place it covered in the fridge. Rinse and drain corn and beans. Slice eggs and potatoes, combine oil, spices, garlic and the rest of your lime juice making a dressing. Mix all ingredients together and add more spices if necessary. Decorate with leaves of coriander.

Another interesting variation of this popular recipe includes unusual ingredients such as spinach. You will need 250 grams of fresh, young spinach, a can of black beans, a can of corn, 200 grams feta cheese, olive oil, garlic, chili pepper, salt, three slices of toast, oregano and lime juice. First, rinse and drain canned ingredients.

Cut toast into cubes and bake in greased pan sprinkled with salt and oregano for a few minutes. Prepare your dressing, mixing together olive oil, lime juice, spices and sliced chili pepper and minced garlic. Cut feta cheese into small cubes, add all other ingredients and mix well. Add more spices or oil if you think it is needed.

For this unusual recipe you will need a grill. Take one small eggplant, one zucchini, one green and one red sweet pepper, one can black beans and a can of sweet corn, one large spoon of acetto balsamico, olive oil, three cloves minced garlic, two tortillas, one avocado, juice of one or two limes and grated hard cheese, and, of course, salt, pepper and chili powder.

Slice and grill eggplant and zucchini slices. Slice and grill green pepper and make tiny tortilla strips and grill them, too. Rinse and drain beans and corn. Combine oil, acetto balsamico, lime, garlic and spices and mix well. Slices of red pepper you should mix together with all other ingredients, including grilled ones, while still warm. Add fresh basil or coriander leaves for decoration and enjoy.

This simple salad is really nice one. Use corncobs, black beans, avocado, garlic, salt, pepper, chili powder, lime juice, red sweet pepper, sliced and good olive oil. Then, add chopped dried tomatoes and green salad cut into stripes. Mix well and serve in tortillas, for example, or as a side dish, you will simply enjoy in it. It really doesn't take too much time to prepare, and tastes great.
