The need to customize a grilling machine is usually born from need. People that compete in outdoor cooking events need precision cooking vessels that can handle the various cuts of beef, pork, or chicken that is listed in a competitive event. The person that cooks meats on an apparatus outdoors several times a week is less concerned about the surface on which it is cooked. That person is not concerned about how much time is allowed for cooking, as is the case for a professional grill master.

In the design, the cook will have to specific the type of fuels that will be used during the cook cycle. The grilling professional will have to establish a preference based on their cooking style. Natural gas and propane options will deliver a desired result, but some cooks simply prefer to cook meats with charcoal to add a certain flavor to the meats that are placed on the grill rack.

An area that is out in the open and subject to sea spray would require a grill that is equipped with wheels. Some custom machines will allow the cook to use less spices based on the type of briquettes that are used.

A true grilling enthusiast will not trash the parts from an old grill, because most parts are reusable in some way. Based on passed or failed cooking methods of the past, a good cook will realize that a certain part in the unit can be made to perform a task better if some modifications are made to a part in the machine.

A grilling enthusiast will need to keep a variety of replacement parts on hand year round to ensure that cooking is possible at any time of the year. Aluminum metals are lightweight and less costly to transport from site to site. Those parts can range from replacement burners, covers, grates, and hoods to the supplies needed to smoke meats for a set number of hours.

When a cooking unit is designed for use in a backyard setting, the cost of materials is a lesser concern. When competitions are being held, however, the greatest concern is how the food will taste at the end of the event. The interior design will include racks that are in both horizontal and vertical positions. Some areas will be designed to keep food at eating temperatures without drying the meat out

Other cooks will custom order a grill that has exact measurements stated for the bottom areas of the grill where charcoal briquettes will be placed. Even distribution of these coals will ensure even heating over every area where the food is placed.
