Fusion Dining is the newest trend!

The concept of fusion dining was first established in the 70's, but has recently seen a dramatic increase in popularity with fusion style restaurants popping up all over London. A fusion menu consists of various cuisines from different countries or regions offered in one, single dining experience. The actual meaning of the term can be a little hazy but here is a list of the possible interpretations. Generally, fusion dining pulls on different ingredients, spices and recipes from a number of contrasting cultures:

This is where a menu will offer dishes from different countries, such as Modern British and French cuisine, in order to appeal to a wider customer base.

Regional fusion menus combine cuisines of a region or sub-region; for example, an African restaurant may offer Kenyan-inspired dishes, alongside meaty and hearty recipes from the South.

This includes seasoning and spicing a dish from one nation with flavours indigenous to another. This may include dishes such as a curried sausage casserole or a cajun flavoured cod bake.

This is where you fuse two different classic dishes from different nations and cultures to come with something new and innovative. Take the classic Italian pizza for example - you can now order a Taco inspired version, alternatively topped with Monterey-Jack cheese, refried beans, salsa and crushed tacos. The fusion of different ingredients is fascinating and gives for some wildly entertaining main courses!

People have been experimenting with foods at home for many a year, but it's the restaurants that bring the most exciting creations to the table. One of the first restaurants to really offer this type of culinary innovation was the five-star, Imperial Dynasty Restaurant in California. Their fusion speciality was to offer combined French and Chinese cooking.

Private Member's Club, Home House of Portman Square, London, offer a fabulous fusion dining experience. The Octagon Dining Room Restaurant of House 20 specialises in providing Asia-influenced fusion dishes. Diners can enjoy a selection of light ramen, soups and salads in Japanese style, or choose a delicious dish from the main menu that features more elaborate Far Eastern treats; such as, whole baked sea bass in banana leaf with chilli lime sauce. The Octagon Dining Room is a beautiful venue, blending history and modernity to offer something truly original and magical. Even the cocktail list continues the Asian theme, featuring flavoursome new creations such as the Tonik, a refreshing mix of traditional Japanese Sake and creme de Peche, created using both fresh mint and refreshing tonic.
